Hey AJ!! I am so sorry about Jon that just sucks but just think about the homecoming that will be so much fun and exciting all at the the same time. I am sure you hear that all the time but that recipe for the lemon garlic chicken I found in a book so here it is I hope you like it as much as we did.
Lemon Garlic Roast Chicken
1/4 C Lemon Juice
1 1/2 T Oil
3 cloves of garlic (minced)
1 teaspoon oregano
1/2 teaspoon marjoram
1/4 teaspoon pepper
3/4 teaspoon salt
4 chicken breasts
1 pound red potatoes (cut in quarters)
1/2 C water

Preheat oven to 425 degrees F. Combine lemon juice, 1 T oil, garlic, oregano, marjoram, 1/2t salt & 1/8t pepper in a bowl. Add chicken and coat well. marinate for 20 min in the fridge. Then combine 1/2 T oil, 1/4t salt & 1/8t pepper in a seperate bowl and toss in the potatoes. Place potatoes on a wire rack in a roast pan(I just used a cooling rack and a baking sheet) roast for 20 min. Remove chicken from marinade and save marinade. place chicken on the rack with potatoes. Add water to reserved marinade and pour over chicken and potatoes. roast for about 20-25 more minutes basting chicken with the pan juices.
That is exactly what the book said with my input. It is really so so good.
